For a kids Halloween party, I had made really cute cut-out cheese sandwiches for the kids to have a healthy snack. I used pumpernickel and wheat breads but COULD NOT throw out the crusts, so I saved them and wished I could make french toast (one of my favorite breakfasts) with them that weekend. So I did!
Come to find out, this is NOT new! There's MANY recipes online for this fabulous invention. (HERE's one that sounds especially tasty!) Below is the version I made up according to what I had in the house to use up! I was most happy that it had a lot of flavor, but only 3 tablespoons of sweetening ingredients for 4 adult servings!! Compare THAT with all the syrup put onto French toast! It took less than 10 min to mix up and 20 min to bake! Delicious! So here it is. Recipe serves 4 adults or 2 adults and 3 munchkins!
Oh, and just to mention 2 things, the pumpernickel was INCREDIBLE! I highly recommend using at least half pumpernickel! And the other thing I've found since then is that I can keep a bag in the freezer for bread "ends" and crusts, always having some bread read to make this dish whenever I wanna make it without using up the "good" slices! Must-haves:
about 3/4 - 1 loaf of sliced bread, cubed into chunks
(pumpernickel, whole grain, and/or whole wheat breads work best to not end up being soggy!)
1 c milk (at least 1% or 2%)
4-5 eggs (depending on how you normally like your french toast)
1 tsp cinnamon
1/2 tsp pumpkin pie spice
2 Tbspn maple syrup (or brown sugar)
1 Tsp vanilla
Optional Add-ins:
1 cup fruit (diced apple, pumpkin, banana, pear, )
1/4 c coconut
1/2 c nuts
Toppings:
1/2 c Nuts
1 Tbspn brown sugar or honey
Steps:
Preheat oven to 350 F. No need to grease your casserole dish.
Mix wet ingredients.
Pour over bread and stir only to combine. (don't let sit or end product will be soggy).
Bake in oven for 10 min.
Stir and top with nuts and sprinkle the brown sugar or honey over the top.
Bake for another 10 more min, or until the bread's no longer soggy!
** If you stir it more than once, it will mush up and be more like bread pudding, which may be desirable to you depending on your texture preferences.
